Roast sweet potato and red onion soup
Ingredients
500g/1lb 2oz sweet potatoes, peeled and roughly chopped
1 red onion,chopped
2tbsp olive oil
2tsp ground cumin
1 litre/1¾ pints vegetable stock
1tbsp tomato
purée
4tbsp natural yogurt, to serve
Fast to prepare, with just a handful of ingredients

Method
1 Preheat oven to gas mark 7/220°C (200°C) in a fan oven. Put potatoes and red onion in a roasting tin and drizzle over olive oil. Sprinkle with cumin and plenty of salt and freshly ground black pepper.
2 Roast potatoes and onion for 20 mins, till tender and golden.
3 Blend potatoes and onion with hot stock and tomato purée in batches till smooth. Put in a pan and warm through to serve. Add a dollop of yogurt on top.
