Subject: Re: what to serve with roast goose
How lovely! I did goose once; it was very large and had to go into my gas oven sort of diagonally, with foil over its bottom where it overhung the flame. But it was wonderful, and had the texture and colour of young lamb.
You can serve all the usual suspects, as it's Christmas, although braised red cabbage goes well with it. Traditionally apple sauce is served, and an apple and prune stuffing. For a 10-12lb goose, soak 20 prunes in red wine or water for a few hours, then remove the stones. You can just squeeze them out with your fingers. Peel and quarter 6 apples. Put these and the prunes inside the bird and sew up (or close with cocktail sticks). Roast as per your recipe.
