Go on a course… hedgerow cooking
Make the most of a bounty of wild fruits with a hedgerow cookery course. By Kitty Corrigan
'Since attending Ana Jones's wild fruits cooking course, I've tried every recipe on the day's menu and now have a cupboard jam-packed with jellies, preserves, chutneys, syrups and sloe gin.
'Ana first explained the uses of the elderberries, blackberries, rosehips, crab apples and haw berries in front of us. The preserving pans on the woodburning range at this organic flour mill were soon exuding delicious aromas as we stirred and tested for the setting point, while keeping an eye on the tartlets in the oven, filled with blackberries and a local apple variety.
'In the afternoon, we made bramble curd. Spread on elderberry scones for tea, it was divine.'
