How to grow spinach from seed

Choose a sunny spot for your sowings as the plants will benefit from the maximum light during the colder months. Place the seeds 2.5cm deep in nutrient-rich soil (dig in plenty of compost or well-rotted manure), allowing 30cm between each row. If starting in August, you'll be able to sow again in September - by staggering your crops this way, you'll ensure a steady stream of spinach into the kitchen.

Once the seedlings have grown large enough to handle, thin them out so there is 7-8cm between them. When the days become chilly, cover the remaining plants with a cloche (those made out of a plastic drinks bottle with the bottom cut off work well, though you can buy more elegant designs from gardening centres and mail-order companies). Alternatively, place straw on the soil at the base to prevent the earth freezing around the plant and put horticultural fleece over it for frost protection.

When it comes to harvest time - from October to April - don't miss out on those smaller, tender leaves which are wonderful eaten as they are. The larger ones will suit cooking - either by wilting them in a pan, steaming or boiling them. Picking them regularly will encourage new growth and extend the supply.
