Purple-sprouting broccoli with hazelnut and orange gremolata

• 400g purple-sprouting broccoli, trimmed
• 1 tablespoon rapeseed oil, plus extra for drizzling
• 3 garlic cloves, very finely sliced
• grated zest of 1 orange
• 25g hazelnuts, toasted and chopped
• ½ tablespoon finely chopped flat-leaf parsley

Method

1. Steam the broccoli for about 4-5 minutes until tender. Meanwhile, heat the oil in a frying pan and gently sauté the garlic until pale gold – don’t let it get any darker.
2. Mix the garlic with the zest, hazelnuts and parsley and gently toss together.
3. Put the broccoli into a warmed serving dish and drizzle lightly with the oil, season and scatter with the hazelnut mixture.
