Bread sauce

Ingredients

6 whole cloves

2 medium onions

900ml (1½ pints) milk

3 bay leaves

175g (6oz) fresh white breadcrumbs

25g (1oz) butter

A little grated nutmeg

4tbsp crème fraîche

Method

1 Push three cloves into each onion. Put into a pan with the milk and bay leaves. Season, bring almost to the boil, then take off the heat. Cover and leave to infuse for 30 min to 2 hr.

2 Strain the milk into a pan and, over a low heat, stir in the breadcrumbs. Bring to the boil, stirring, and simmer for 5 min.

3 Stir in the butter, nutmeg and crème fraîche. Season and serve.
