Spiced celeriac and carrot salad

Ingredients

1 medium celeriac, peeled
2 large carrots
Juice of 1 lemon
4tbsp olive oil
3tbsp black mustard seeds
2tsp cumin seeds

Method

1 Finely grate the celeriac and carrots. Transfer them to a wide shallow serving bowl. Add the lemon juice and toss to mix well.

2 Heat the oil in a small saucepan and add the mustard and cumin seeds. When the mustard seeds start to pop, remove from the heat and pour over the celeriac mixture. Season well and toss to mix thoroughly. Serve immediately, or at room temperature.
