Sweet chilli chicken
Ingredients
8 boneless, skinless chicken breasts, scored
4 garlic cloves, crushed
8 spring onions, roughly chopped
2½cm piece root ginger, grated
4 tbsp fresh coriander
4 tbsp sweet chilli sauce
4 tbsp light soy sauce
4 tbsp clear honey
juice of 2 limes
A tasty, easy-to-prepare dish to take along just in case the fish aren't biting.

Method
1 Put the chicken in a shallow plastic bowl and season. Add the garlic, spring onion, ginger and half the coriander.
2 Mix together the sauces, honey and lime juice. Pour over the chicken, stir to coat and chill for 2-24 hours. Cook on the barbecue for 20 minutes, turning, until cooked through (the juices should run clear when pierced with a knife). Sprinkle with the remaining coriander to serve.
