Griddled garlic bread
Ingredients
175g butter, cubed
3 garlic cloves, crushed
bunch of stiff-stemmed fresh thyme sprigs
1 large crusty loaf, thickly sliced
A simple way to make garlic bread on the barbecue.

Method
1 Put the butter and garlic in a small metal or heatproof dish (a tin mug is ideal) and sit it on the barbecue grill. Leave to melt. Season with salt and freshly ground black pepper.
2 Dip the thyme sprigs into the butter and use them to brush one side of each slice of bread. Put the slices, buttered side down, on the barbecue. Cook for 1-2 minutes until crisp and golden. Brush uppermost sides with remaining butter; turn over and cook for another minute. Serve hot.
