Vanilla Tiramisu
Ingredients
284ml carton of double cream
3 eggs separated
75g/3oz golden caster sugar
1tsp vanilla extract
200g pot of mascarpone cheese
100ml/4fl oz coffee liqueur
300ml/10fl oz very strong black coffee
175g packet sponge fingers
cocoa powder, sieved, to dust
You will need:
An 18cm x 23cm/7in x 9in 5cm/2in deep dish

Method
1 Whisk cream till softly peaking, then set aside. Next, whisk together egg yolks, sugar and vanilla till pale, frothy and doubled in volume.
2 Whisk in mascarpone and fold in cream to make a smooth mixture.
3 Pour coffee liqueur and black coffee into a shallow dish. Dip sponge fingers one at a time into this coffee mixture and arrange a layer in base of rectangular dish. Spoon on half of mascarpone mixture.
4 Repeat with another layer of coffee - dipped sponge fingers, then spread over remaining mascarpone mixture. Dust cocoa liberally over top, cover and chill. Cut into squares to serve.
