Anchovy crostini
Ingredients
4 large slices country-style white bread, cut into 1½in squares
2tbsp unsalted butter
4 anchovy fillets, drained and chopped (if using salted, rinse and dry on paper towel)
350g/12oz provolone cheese, sliced into ¼in thick slices x 1½in squares
A simple appetizer – wonderful with a glass of bubbly

Method
1. Preheat oven to gas mark 4/180˚C (170˚C in a gas oven). Put bread on a baking sheet and toast till medium-dark.2. In a small saucepan, melt butter. Add anchovies, stirring and crushing with a wooden spoon or spatula for 3-4 mins. Remove pan from heat. Spoon anchovies onto toast squares and top each with a square of cheese. Bake till cheese melts and browns, about 5-8 mins. Top with a sprig of lemon thyme.
