Apple and bacon mash

Ingredients

800g (13/4lb) potatoes, peeled and roughly chopped
300g (11oz) cooking apples, peeled, cored and chopped
25g (1oz) butter
200g (7oz) bacon lardons
4tbsp finely snipped chives

The addition of apple makes this mash deliciously tart in flavour, and the perfect accompaniment to the lamb shanks.

Method

1. Place the potatoes into a large saucepan and add enough water to cover. Bring to the boil and simmer gently for 15-20 minutes or until the potatoes are tender. Drain off about two-thirds of the water and stir in the apples. Cover and cook gently for 10-12 minutes or until the apple is soft enough to mash into the potato. Add the butter and beat well with a wooden spoon until you have a fairly smooth mash. Season, set aside and keep warm.
 
2. While the potatoes and apples are cooking, fry the bacon lardons in their own fat until they are crisp and golden. Stir two-thirds of the bacon into the mash with the chives and spoon the mixture into a warmed serving bowl. Sprinkle over the remaining bacon and serve.
