Avocado, orange and onion salad
Ingredients
2 hass avocados, peeled and stoned
2 large navel oranges
1 red onion
For the dressing
2tbsp red wine vinegar
4tbsp extra virgin olive oil
1tsp Dijon mustard

Method
1 Cut the avocados into thin slices and set aside. Peel and remove the pith from the oranges. Remove any pips, then cut the flesh into 1cm (½in) slices. Peel, halve and thinly slice the red onion. Arrange the avocado, oranges and red onion slices in a shallow serving bowl.
2 Place all the dressing ingredients in a screw-top jar and season well. Shake thoroughly to combine. Pour the dressing over the salad and serve at once.
