■ Cut peeled onions into thick chunks and thread onto skewers. Sprinkle with balsamic vinegar and oil, and cook for 5 minutes each side.

■ Cut 1 large butternut squash into wedges. Blanch in salted boiling water for 2-3 minutes. Drain and pat dry. Store in a plastic container to transport to the barbecue. Brush with herb or chilli oil and barbecue for 3 minutes each side.

Remember to ask...

...the local council where you can hold your BBQ. Some areas of beach are out of bounds (eg near piers), and there can be rules about what time you can have one and how many people are allowed.

Whole fish with herbs and lemonRemember to bring...

...tongs for turning the food; a knife for preparing freshly caught fish; salt and pepper for seasoning; a small bottle of oil to stop food sticking to the grill; lemons for squeezing; nibbles to keep you going while the barbecue is heating up; lots of cold drinks in a coolbox.

Remember to...

...raise your barbecue off a pebbled beach - it will prevent pebbles shattering and burning other people once you've left.

...douse the barbecue with water when you're finished and take your rubbish home.
