Blue Cheese Potato Cakes
Ingredients
900g (2lb) cooked mashed potato
4tbsp freshly chopped flat-leafed parsley
125g (4oz) blue cheese, crumbled
A little plain flour to dust
25g (1oz) butter
2tbsp vegetable oil
Little cakes of potato stuffed with blue cheese

Method
1 Put the mashed potato into a bowl with the parsley and blue cheese. Mix together thoroughly and season.
2 Lightly dust your clean hands with flour and divide the mixture into eight, then shape each portion into a small cake. Chill the cakes for 2hr.
3 Heat the butter and oil in a large pan and cook the potato cakes for 3-4min on each side until golden. Serve with peas and salad.
