The TV chef's brilliant tips for making lunches fabulous

Celebrity chef Brian Turner1. A really tasty way to liven up salads or sandwiches is to roast chipolatas with honey and sesame seeds. This is a personal favourite of mine.

 

2.  Roast chicken legs stuffed with mascarpone and tomatoes - now this is so simple and is perfect in a lunchbox.

 

3. Buy fresh, large packs of chicken thighs  - these are great to have to hand for lunchtimes. You can then freeze those not needed straight away.

 

4. If you want a simple, quick and healthy lunch, grill some lamb chops and serve with chopped mint added to Greek yoghurt.

 

5. For a fast and tasty kebab, grill some chicken or beef on skewers and then dip into yoghurt and tomato ketchup dip. Delicious!

 

6.  This is a great way to keep the kids happy - my grandkids love it! Simply heat up some rice pudding, when it cools down mix in some whipped cream and tinned pineapple.  You could even get the kids to help.

 

7. The key to saving money is planning what you're going to eat for lunch throughout the week in advance. Look out for special offers at farm shops and farmers markets too. You'll find you'll save money by doing one big shop rather than lots of little shops.

 

8. Another tip for cutting lunchtime food bills is to ‘eat in season' - it can help you make great savings and it's good for the environment too. Fill sandwiches with grilled and chilled veg of the moment and follow up with in-season fruit.

 

9. Just before you go to put that roast chicken or beef in the bin after your Sunday roast, think again. Use the leftovers for sandwiches during the week. I find that piccalilli works perfectly with beef; and roasted red cabbage is a match made in heaven with chicken and blue cheese.

 

10. And don't even think about throwing those chicken bones away either! They're packed with flavour so roast them and use as stock to make a great lunchtime chicken and noodle soup. Perfect for those colder days.
