By the age of 22, Ian Buxton was managing Leeds University's herd of 120 dairy cattle. Two years later he had his own 80-acre dairy farm, rented from North Yorks County Council. Now, with the help of his wife Lesley, he's turning the milk from their 35-head Friesian herd into Yorvale ice cream. Its success has allowed them to buy the farm and increase the range to more than 25 ice cream flavours and 10 sorbets, sold in farm shops, independent retailers and - via their vans - direct to the public.
