Butter beans in herb and tomato sauce
Ingredients
2tbsp olive oil
1 carrot, finely diced
1 garlic clove, crushed
1 x 400g can butter beans, drained
1 x 400g jar tomato pasta sauce
4tbsp chopped fresh mixed herbs
A deliciously herby side dish

Method
1 Heat the oil in a pan and fry the carrot and garlic for a few minutes until softened slightly. Add the beans and pasta sauce and simmer for 10-12 minutes or until the sauce has thickened. Remove from heat and stir in the herbs. Season and serve.
