Caesar salad tortilla cones

Ingredients

1tbsp fresh lemon juice
4tbsp shop-bought Caesar dressing
4 large white tortilla wraps

2 Little Gem lettuces, cut into thin wedges
24 marinated anchovy fillets (or in oil from the deli counter)
25g/1oz fresh Parmesan, shaved with a vegetable peeler


Crisp and cool, this zingy snack is ready in minutes

Method

1 In a bowl, mix lemon juice with Caesar dressing. Add a little freshly ground black pepper, if you like.

2 Warm tortillas as per pack instructions. Cut each in half, then fold to make a cone shape. Add a few wedges of lettuce, 3 anchovies and a few shavings of Parmesan. Secure the cone, if you wish, with a strip of greaseproof paper, twisting the ends to hold its shape. Drizzle over a little dressing just before serving.
