Cheats’ custard tarts
Ingredients
½ x 500g pack puff pastry
1/3 x 400g can custard
1 egg, plus 2 extra yolks, lightly beaten
pinch nutmeg or cinnamon
You will need:
a lightly oiled 9-hole bun tin and a 10cm/4in round cutter

Method
1 Preheat oven to gas mark 5/190ºC (180ºC in a fan oven). On a floured surface, roll out pastry, about 4mm thick, then cut out nine circles and line bun tin. You may have to re-roll pastry midway. Put in fridge for 20 mins.
2 Brush pastry with egg yolk. In a bowl, mix together custard with a whole egg and remaining egg yolk, then spoon mixture into pastry cases and sprinkle with nutmeg or cinnamon. Bake till pastry is golden and custard mixture is set, about 20-25 mins.
