Chicken and berry salad
Ingredients
2 small skinless, boneless chicken breasts
20g/¾oz pecans
135g/4½oz bagged salad 55g/2oz strawberries, sliced
25g/1oz blueberries
20g/¾oz raspberries
75g/3oz tender sugarsnap peas
3tbsp light honey mustard dressing
The berries are packed with anthocyanins, which are so good for you

Method
1 Grill chicken breast for six to eight mins on both sides, till juices run clear, then cut into slices.
2 Meanwhile, pop pecans on a baking tray and toast in a medium oven for a few mins.
3 In a large bowl, mix together chicken, salad, strawberries, blueberries, raspberries, sugarsnap peas and toasted pecans. Then pour over dressing and toss to coat.
