Chive and Broccoli Rice
Ingredients
2tbsp vegetable oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
1 red chilli, finely chopped
250g (9oz) small broccoli florets, blanched in boiling water for 2 minutes and well drained
3tbsp light soy sauce
250g (9oz) cooked jasmine or basmati rice, cooled
1tbsp sweet chilli sauce
½tsp sesame oil
1 small bunch of chives, finely chopped
Liven up rice with the addition of chives and broccoli

Method
1 Heat the vegetable oil in a large non-stick frying pan or wok, add the onion and stir-fry for 2-3 minutes.
2 Add the garlic, chilli and broccoli florets and stir-fry for 2-3 minutes. Then add half of the soy sauce and stir-fry for a further 30 seconds.
3 Stir in the cooled rice, chilli sauce, sesame oil and remaining soy sauce and mix thoroughly. Season, remove from the heat and add the chives just before serving.
