Chive vinaigrette
Ingredients
½tsp salt
½tsp freshly ground black pepper
2tbsp fresh lemon juice or white wine or cider vinegar
100ml extra-virgin olive oil
3tbsp finely snipped chives
1 very finely chopped shallot (optional)
This vinaigrette makes an ideal dressing for a warm potato salad

Method
1 Whisk the salt and freshly ground black pepper into the fresh lemon juice or white wine or cider vinegar. Add the extra-virgin olive oil and whisk again.
2 Stir in the chives and, optionally, a very finely chopped shallot.
Use to dress warm potatoes for a potato salad or to serve with grilled or baked fish. Vary the basic formula with additions of fresh tomato, skinned, seeded and finely chopped, as well as finely chopped parsley or coriander.
