Chocolate queen of puddings
Ingredients
600ml/1 pint milk
50g/2oz unsalted butter
3tbsp cocoa
150g/5oz caster sugar
3 large eggs, separated
125g/4oz white breadcrumbs

Method
1 Preheat oven to gas mark 4/180ºC (170ºC in a fan oven). In a small pan, heat milk and butter till almost boiling. In a small bowl, mix cocoa with 100g/3½oz sugar and the egg yolks till smooth. Stir into milk then add breadcrumbs and pour it all into an ovenproof dish, or 4 individual pots. Cook for about 20 mins, till just set.2 Whisk egg whites till soft peaks, then fold in remaining sugar. Spoon over chocolate mixture and cook for 5-10 mins, till golden.
COOK'S TIP
Use slightly stale bread for this.
