Straight-from-the-pan Chorizo Tortilla
Ingredients
1 tbsp olive oil
820g can new potatoes, drained and quartered
110g pack chorizo
6 medium eggs, lightly beaten
This chorizo tortilla makes an ever-so-easy and very tasty supper

Method
1 Heat the oil in a large frying pan and fry the potatoes until golden. Add the chorizo and cook for 1-2min. Preheat the grill.
2 Add the eggs, season with salt and pepper and cook for 5min over a low heat until golden underneath.
3 Put the pan under the grill for 1-2 min or until the eggs are just set.
