Christmas Compote

Ingredients

2tbsp clear honey
300ml (½ pint) dessert wine
300ml (½ pint) fresh fruit juice such as orange, apple and mango or pineapple   
1⁄2 level tsp freshly grated nutmeg
1 cinnamon stick and/or 3 thick slices fresh root ginger
225g (8oz) mixed dried fruits
125g (4oz) small, black seedless grapes
125g (4oz) redcurrants
3 clementines
1 small fresh mango
1 small ripe pineapple
400g can apricot halves in natural juice, drained

Method

1 Put the honey, wine, fruit juice and spices in a medium saucepan and warm gently until the honey has dissolved. Bring to the boil and simmer gently for about 3min.

2 Add the dried fruit, return to the boil and simmer for 3min. Pour into a heatproof bowl and stir in the grapes and redcurrants. Remove and discard the cinnamon stick and leave the fruit to cool.

3 Peel and thickly slice the clementines and mango. Peel, core and thinly slice the pineapple, cutting each slice into quarters. Stir into the mixed fruit with the drained apricot halves. Put back in the fridge and chill for 30min before serving.



TO FREEZE
Spoon compote into a sealable container and freeze. (The fruit will soften.)

TO SERVE
Thaw overnight in the fridge.
