Cod with Chorizo Sauce
Ingredients
100g (3½oz) chorizo sausage, skinned and roughly crumbled
1 large onion, finely chopped
400g can cherry tomatoes
20g pack fresh basil, roughly chopped
2tbsp olive oil
4 x 175g (6oz) thick Icelandic cod fillets

Method
1 Put the chorizo and onion into a non-stick pan and fry for 5-7min until golden.
2 Add the cherry tomatoes and basil. Season and simmer for 5min.
3 Meanwhile, heat the oil in a separate non-stick frying pan. Fry cod for 3-4min until golden and just cooked. Serve immediately with the sauce spooned over.
SERVE WITH...
Herb couscous: Put 250g (9oz) couscous in a bowl with 400ml (14fl oz) hot vegetable stock. Cover and leave for 5min. Stir in 2tbsp olive oil and 4tbsp freshly chopped flat-leafed parsley.
COOK'S TIP
After frying the onion and chorizo, add a glug of medium sherry - 50ml (2fl oz) - then continue to cook the sauce.
