Corn chowder
Ingredients
1tbsp olive oil
1 large potato, peeled and roughly chopped
2 celery sticks, chopped
1 garlic clove, crushed
1 bunch spring onions, trimmed and chopped
600ml/1 pint vegetable stock
2 x 340g cans sweetcorn, drained
300ml/10fl oz light soya milk
Transform a couple of cans of sweetcorn into this creamy soup

Method
1 Heat oil in a large pan then add potato, celery, garlic and half of spring onions. Cook for 5 mins to soften slightly without colouring.
2 Add stock and sweetcorn, bring to the boil, then reduce heat and simmer for 5 mins, till vegetables are tender.
3 Pour half of mixture into a blender and whizz till smooth. Return to pan, pour in soya milk and warm through gently. Serve sprinkled with reserved spring onions.
