Easy cauliflower cheese

Ingredients

1tbsp flour 600ml
1 pint milk
1tsp English mustard
100ml/4fl oz double cream
175g/6oz mature Cheddar cheese
1 cauliflower, cut into florets (reserve some green leaves) 
knob of butter


This is real simple no-frill food that can't be beaten for taste

Method

1. In a saucepan, heat butter. When melted, stir in flour and let flour cook a little. Continuously add milk and stir till it thickens on a low heat. Remove from heat and stir through mustard, cream and three-quarters of cheese. 

2. Preheat oven to gas mark 6/200˚C (190˚C in a fan oven). In a pan of boiling salted water, cook cauliflower florets and leaves, till soft. Drain and put in an ovenproof dish.

3. Cover with cheese sauce then sprinkle over remaining cheese. Put in oven and cook for about 15-20 mins till bubbling and golden.
