Elderflower Cordial
Ingredients
10 large elderflower heads
900g (2lb) caster sugar,
2 washed and sliced lemons
25g (1oz) tartaric acid

Method
Put elderflower heads, caster sugar, lemons and tartaric acid into a large, clean pan. Add 2.3 litres (4 pints) boiling water, cover and leave in a cool place for 24hr, stirring occasionally.
Sterilise some bottles: preheat the oven to 140˚C (120˚C fan oven) mark 1. Wash the bottles and lids in hot, soapy water and rinse well. Lay the bottles on a baking sheet, along with the lids, then leave in the oven for 15min until completely dry.
Strain the elderflower liquid through a clean J-Cloth or muslin into a clean pan, and use a funnel to fill the sterilised bottles. Screw the lids on tightly and leave for two to three weeks.
Dilute the cordial to taste with sparkling mineral water, and chill with ice cubes to serve. Once opened, keep in the fridge and use within two days.
