Elderflower and Fruit Jelly

Ingredients


2-3tbsp elderflower cordial
750ml (1¼ pints) water
200g (7oz) caster sugar
4 gelatine leaves
150g (5oz) raspberries
150g (5oz) seedless grapes, halved


A cool, refreshing dessert with a fruity floral scent

Method


1 Put the elderflower cordial into a large pan. Add the water and caster sugar. Heat gently, stirring to dissolve the sugar.

2 Soak 4 gelatine leaves in cold water for 5min. Lift out the gelatine, squeeze out the excess water, then add the liquid to the pan. Stir to dissolve, then strain into a jug.

3 Divide the raspberries and grapes among six 200ml (7fl oz) glass dishes. Pour in the liquid. Chill for at least 4hr or overnight.
