Fatoush salad
Ingredients
200ml (7fl oz) olive oil
Juice of 3 juicy lemons
1 garlic clove, crushed
2tsp sumac (Middle Eastern spice) or ½tsp ground cumin
1 pitta bread, torn into pieces
6 plum tomatoes, seeds removed and roughly chopped
½ cucumber, peeled and roughly chopped
10 radishes, sliced
1 red onion, roughly chopped
Leaves of 1 little gem lettuce
Handful of fresh mint leaves

Method
1 For the dressing, whisk olive oil, lemon juice, crushed garlic and sumac together. Season.
2 For the salad, place all of the remaining ingredients in a large bowl. When ready to serve, pour over the dressing and gently mix to coat evenly.
