Fruit salad with citrus sugar
Ingredients
For the citrus sugar
75g (3oz) caster sugar
2tbsp finely grated orange zest
2tbsp chopped fresh mint
2tsp finely grated lime zest
For the fruit salad
½ ripe pineapple, peeled and thinly sliced
½ ripe honeydew or cantaloupe melon, peeled, deseeded and thinly sliced
¼ small watermelon, peeled, deseeded and thinly sliced
2 oranges, peeled and thinly sliced
fresh mint leaves, to garnish (optional)
This citrus fruit salad makes a refreshing dessert

Method
1 Put the caster sugar, orange zest, chopped mint and lime zest in a small blender and blitz until evenly combined.
2 Just before serving, layer the sliced fruit on a large serving platter, sprinkling the citrus sugar between each layer as you go.
3 Serve garnished with fresh mint leaves.
