Gammon with Warm Pineapple Salsa

Ingredients

2tbsp olive oil
4 x 175g (6oz) unsmoked gammon steaks
2tbsp brown sugar
300g (11oz) fresh pineapple, diced
1 large green chilli, deseeded and finely chopped
Whole cucumber, deseeded and diced
150g (5oz) Peppadew peppers, drained
and diced

Method

1 Heat the olive oil in a large frying pan and fry the gammon in batches over a medium heat for 5min, turning them halfway through. Remove to a plate and keep warm.

2 Add the sugar, pineapple and chilli to the pan and cook over a medium heat for 2min until the pineapple is caramelised. Stir in the cucumber and peppers and cook for 1min until heated through. Serve the salsa at once with the gammon.

Serve with new potatoes or long grain rice and steamed tenderstem broccoli.
