Gardener's pizza

Ingredients

200g (7oz) strong white flour
½tsp salt
1tsp fast-action dried yeast
1tbsp olive oil
6tbsp pizza sauce
50g (2oz) fresh peas
2 medium tomatoes, sliced
½ yellow pepper, deseeded and cut into strips
6-8 pieces artichokes in oil
125g (4oz) ball mozzarella, torn into pieces

Method

1 Sift the flour with the salt into a large bowl. Stir in the yeast. Make a well in the centre and pour in 100ml (3½fl oz) warm water with the oil. Mix together quickly with a wooden spoon to form a dough.
2 Knead the dough on a floured work surface for 10min until smooth. Put into an oiled bowl and cover with a tea towel. Leave for 1hr or until doubled in size.
3 Preheat the oven to 230ºC (210ºC fan) mark 8. Roll out dough to a 30.5cm (12in) circle. Put on to an oiled baking sheet.
4 Spread with sauce; arrange the remaining ingredients on top. Bake for 5min, then reduce temperature to 200ºC (180ºC fan) mark 6 and cook for another 15min. Add freshly ground black pepper and a drizzle of extra virgin olive oil, then serve.
