Gin and tonic granita

Ingredients

750ml/1¼ pints tonic water

3tbsp caster sugar

zest and juice of 1 lemon, plus lemon slices, to serve

4tbsp gin, plus extra, to serve

Method

1 Put tonic water, sugar, lemon zest and juice in a pan, bring to boil and reduce to 500ml/20fl oz. Remove from heat and leave to cool.

2 Strain through a sieve into a large, shallow, freezer-proof lidded container, add gin, and put in freezer for 2-3 hrs, shaking container occasionally to break up ice crystals. Crush with a fork just before spooning into glasses, and drizzle over a little extra gin to serve.
