Good-for-everything Bolognese
Ingredients
1tbsp olive oil
350g pack Quorn mince
1 medium onion, chopped
2 celery sticks, chopped
2 carrots, grated
1 garlic clove, crushed
1tbsp plain flour
1tbsp tomato purée
400g tin chopped tomatoes
450ml (15fl oz) hot vegetable stock
1tbsp vegetarian Worcester sauce (we used Life Free From Worcester Sauce, from £1.37 for 150ml, Asda and Waitrose)
500g pack flavoured tagliatelle, such as saffron or garlic and herb
2tbsp freshly chopped basil
Don't save this versatile sauce just for pasta - it's also great in lasagne or on jacket potatoes.

Method
1 Heat oil in a large non-stick pan. Brown the Quorn mince for 3-4min, then set aside.
2 Cook onion, celery and carrot in the same pan over a gentle heat for 10min until softened. Add garlic and cook for 1min. Stir in the flour and
cook for 1min. Add tomato purée, tomatoes, stock, Worcester sauce and mince. Simmer, uncovered, for 30min.
3 Cook the pasta according to intructions. Drain. Stir the basil into the sauce, toss into the pasta and serve.
Cool and freeze for up to three months. Defrost before use and reheat on the hob until piping hot.
