Green bean and prosciutto wraps
Ingredients
500g (1lb 2oz) fine or dwarf green beans, trimmed
½ red pepper and ½ yellow pepper, cut into long thin slices
4-6tbsp grated Parmesan
12 slices prosciutto ham
2tbsp olive oil
Basil leaves, to garnish (optional)
For the dressing
4tbsp extra virgin olive oil
Juice of 1 lemon
1tsp runny honey

Method
1 Blanch the beans and peppers in a large pan of boiling water for 1-2 minutes or until they're just tender. Rinse under cold running water; drain. Transfer to a bowl, stir in the cheese and season to taste. Toss well.
2 Divide the mixture into 12 portions and wrap each one in a slice of prosciutto to form a bundle, with the vegetables sticking out each end.
3 Heat a large non-stick frying pan over a medium heat. Add the olive oil and fry the bundles for 2-3 minutes or until lightly browned. Remove from the heat and arrange on a platter.
4 Mix together the ingredients for the dressing and drizzle over the wraps. Season and garnish with basil leaves if desired.
