Grilled Sardines with Mediterranean Vegetables

Ingredients

45ml (3tbsp) olive oil
2 red onions, about 300g (11oz), peeled, halved and cut into petals
2 garlic cloves, crushed
2 red peppers, about 375g (12oz), halved, de-seeded and cut into chunks
225g (8oz) courgettes, cut into small chunks
Salt and ground black pepper
900g (2lb) sardines (about 16), cleaned
Olive oil and lemon juice to drizzle
Small fresh basil sprigs to garnish


Sardines taste so summery, particularly when served with these Mediterranean vegetables

Method

1 Heat the oil in a large frying pan or griddle, add the onion and fry for 2–3min or until almost soft. Add the garlic and peppers and stir fry for 5min, then add the courgettes and stir fry for 4–5min or until almost soft. Keep warm.

2 Season the sardines and cook under a hot grill or on the griddle for 3–4min on each side or until cooked in the centre.

3 Drizzle the sardines with a little oil and lemon juice. Garnish with basil and serve with the vegetables.


PREPARE AHEAD
Complete step 1 up to 3hr in advance. Cover and chill.

TO SERVE
Stir fry the vegetables for 2–3min or until hot. Complete the recipe.
