Grilled fruit with amaretti

Ingredients

12 ripe apricots, halved and stoned

6 small ripe nectarines, halved and stoned

50g (2oz) caster sugar

250g tub mascarpone

6 amaretti biscuits, crushed


A delicious fruity dessert

Method

1 Preheat the grill to hot, and line the grill pan with foil.

2 Put the apricots and nectarine halves cut-sides up in the grill pan.
Sprinkle with the caster sugar and grill for 5-8 min until the fruit is
tinged a golden brown.

3 Meanwhile, beat the mascarpone to soften it and make it smooth.

4 Divide the fruit into six small serving dishes, top with the mascarpone and sprinkle over the crushed amaretti biscuits. Serve immediately.
