Grilled peppers and halloumi cheese

Ingredients

450g jar of red peppers (we used Karyatis Roasted Red Peppers, £2.05 for 450g from Sainsbury's)

2 x 250g packs halloumi cheese, sliced

1 small red onion, halved and sliced

Several sprigs of fresh thyme

1tbsp olive oil


Serve this as a tempting starter

Method

1 Drain peppers and pat dry with kitchen paper. Put onto a heatproof tray. Arrange 3 slices of cheese on top, then scatter with onion and sprinkle with thyme leaves.

2 Season generously with salt and freshly ground black pepper, and drizzle with olive oil. Then grill or barbecue for 10-15 mins, till completely warmed through.

Tip: To cook, we used a Grilling Plank, £2.95 from Homebase (0845 077 8888), for a gorgeous smokey flavour.
