Grilled spiced vegetables
Ingredients
150ml/5fl oz olive oil
1 clove garlic, crushed to a paste
2 red onions, halved
2 aubergines, sliced into wedges
Pack 3 mixed peppers,(red, yellow and green), deseeded and cut into wedges
Juice of ½ lemon
If you've a small barbeque, or the weather is bad; griddle these or roast in a hot oven for 25 minutes

Method
1 In a large bowl mix together curry powder, olive oil, garlic, salt and ground black pepper.
2 Cut the onions into wedges, keeping the stem in tact so that the slices stay together. Toss with the aubergines and peppers in oil mixture.
3 Cook on a hot barbeque for 3mins each side, or till cooked though and lightly charred. Return to a clean bowl, and squeeze over juice ½ lemon to serve.
Tip: Use mild curry powder if you like things less fiery.
