Ham and blue brie salad with figs
Ingredients
FOR THE DRESSING
6tbsp extra virgin olive oil
2tbsp lemon juice
1tbsp white wine vinegar
1tbsp wholegrain mustard
1tbsp honey
FOR THE SALAD
1 head of radicchio, leaves separated
150g (5oz) wild rocket leaves
250g (9oz) thinly sliced ham, turkey or chicken
4 ripe figs, quartered lengthways
100g (3½oz) blue brie, thinly sliced
A fabulous and refreshing combination that's strangely filling

Method
1 Combine all the dressing ingredients in a screw-top jar and shake well.
2 Arrange the radicchio, rocket, ham, figs and brie on four serving plates and drizzle with the dressing.
Cook's tip
To make it even easier, use a bag of ready-prepared salad leaves. Spinach, rocket and watercress will go well with the blue cheese and honey-mustard dressing.
