Sausages with Mashed Potato

1. Cook up sticky sausages. Lay sausages out in a roasting tin. Mix together some hot mustard, a little honey and some cranberry sauce. Smother mixture all over the sausages. Throw in a couple of red onions, cut into eights, a sprig of rosemary and a good pinch of sea salt and pepper. Pop in a hot oven and cook for about 20 mins, till sausages are golden.

 

2. Serve toad-in-the-hole for supper. Pan-fry sausages in olive oil, till cooked, then transfer to an ovenproof dish. To make beer batter, mix 125g/4oz plain flour and a pinch of salt, in a bowl. Make a well in the middle, then add two eggs and stir, bringing in the flour as you go. Then slowly pour in a 300ml/½ pint mixture of milk and beer, stirring continuously. Stir in all the milk, so there are no lumps. Pour over sausages and pop in a hot oven. Cook for about 30 mins, till batter is golden and risen.

 

3. Cook up a sausage omelette. Slice 4 sausages and add to a pan of hot oil. Cook till almost done, then add 3-4 beaten eggs and cook for a few mins, till egg is set and sausages are cooked through. Serve straight away with tomato chutney.

 

4. Prepare a meaty stuffing. Squeeze the sausage meat filling out of eight sausages. Mix with freshly chopped rosemary and black olives. Use the mixture to stuff a chicken or turkey.

 

5. Top a cheese and tomato pizza with cooked, sliced sausages and grated Pecorino. Pop in a hot oven for 10 mins, then top with peppery rocket and serve with hot chilli oil.

 

6. Serve up a hot sausage salad. Cook sausages, then slice and add to a serving dish. Toss with spinach leaves. Add sliced red onion, sliced fresh orange and toasted hazelnuts. Add a dressing of olive oil and balsamic vinegar. Toss and serve.

 

7. Serve fajitas. Fry sausages with sliced onions and sliced mixed peppers, then sprinkle with seasoning. Cook till sausages are browned. Slice diagonally. Use to fill tortillas, along with salsa and sour cream.

 

8. Bake a sausage pie. Cook sausages in hot oil, till browned. Tip in sliced mushrooms and sage, and cook a little longer. Tip ½ of mixture into a dish, layer with sliced sweet apple, and season. Add remaining mixture, and top with another layer of apple and a round of puff pastry. Seal edges and pop in oven at gas mark 6/200oC (190oC in a fan oven). Cook for 15-20 mins.

 

9. Make a sausage casserole. Brown sausages in hot oil in a casserole dish with sliced red onion. Add butternut squash. Stir, then throw in rosemary, some halved, cooked chestnuts, and mushrooms. Cook for 5 mins, then add 1tbsp of flour, a small can of beer and 300ml/½ pint stock. Put a lid on and bake at gas mark 6/200oC (190oC in a fan oven) for 1 hr.

 

10. Make quick meatballs. Heat oil and add 2 roughly chopped onions. Cook gently for about 15 mins, till onions begin to caramelise, then remove with a slotted spoon and pop to one side. Squeeze the meat out of each sausage from a pack, and mix in a bowl with 2tsp dried oregano and 1 beaten egg, till meat is bound together. Roll into balls and cook in hot oil till browned, then return onions to pan, sprinkle in gravy granules and pour in hot water to cover. Bring to boil, then simmer gently for about 15 mins, till gravy is thickened and meatballs are well-cooked. Serve with spaghetti.
