Italian sausage, artichoke and olive pasta
Ingredients
300g (11oz) conchiglie or rigatoni pasta
1tbsp olive oil
1 finely chopped onion
225g (8oz) chopped Italian sausage
400g can chopped tomatoes
150g (5oz) marinated artichokes
75g (3oz) stoned and chopped black olives
2tbsp freshly chopped flat-leafed parsley.
Warming a filling, this is a perfect winter recipe

Method
1 Cook pasta according to the packet instructions. Meanwhile, heat oil in a frying pan and cook onion over a medium heat. Add sausage to the pan and fry for 3-4min until golden. Add tomatoes and cook for 10min.
2 Stir in artichokes and olives, then cook for 2-3min to warm through. Drain the pasta and return to pan. Pour over the sauce and add parsley. Toss the ingredients together to combine and serve immediately.
