Free range eggs

Eggs-cellent!

We all know how useful these are to throw on toast, but it's not that much harder to make a frittata. To serve four, dig out your largest frying pan, a 30cm one is ideal. Beat 6 eggs and 8floz of milk together. Now assemble everything you'd like to include in your frittata. Fry the chopped vegetables lightly in 1tbsp of oil and add your chopped ham or chicken to the egg mixture. Season well. Add the egg mixture to the pan and cook over a low heat, without stirring, for 8 minutes until set. Sprinkle the top with grated cheese and brown under a hot grill. Serve in wedges with a salad.
