Lemon and herb couscous
Ingredients
250g (9oz) couscous
Zest and juice of 1 lemon
Juice of 1 orange
4 spring onions, finely chopped
6tbsp finely chopped fresh flat-leaf parsley
3tbsp finely chopped preserved lemon (from most supermarkets)
2-3tbsp extra virgin olive oil
Handful of pomegranate seeds, to garnish (optional)
A freshly seasoned couscous recipe

Method
1 Place the couscous in a bowl and just cover with boiling water. Cover and allow to stand for 10-12 minutes or until all the liquid is absorbed. Fluff the couscous using a fork.
2 Stir in the lemon zest and juice, orange juice, spring onions, parsley and preserved lemon. Leave for a few minutes before drizzling over the olive oil. Season well and garnish with pomegranate seeds, if desired.
