Lettuce crab cups
Ingredients
200g (7oz) fresh white crab meat
½ small red chilli, finely chopped
¼ cucumber, deseeded and diced
½ yellow pepper, finely chopped
1tsp toasted sesame oil
Zest and juice of 1 lime
Large handful chives, finely chopped
10 baby gem lettuce leaves
Lime wedges for squeezing
Little Gem lettuce leaves are the perfect size for canapés

Method
Combine the crab, chilli, cucumber, pepper, sesame oil, lime zest and juice and chives. Check the seasoning, then cover and chill until needed.
Spoon the crab mixture into individual lettuce leaves and arrange on a platter.
Serve with lime wedges.
