Lyonnaise potatoes
Ingredients
6 large Maris Piper potatoes
Salt and freshly ground black pepper
125g (4oz) butter
2 onions, thinly sliced
2 garlic cloves, crushed
2tbsp olive oil
The easy way to create this classic side dish

Method
1 Cook the unpeeled potatoes in gently simmering salted water until almost soft all the way through.
2 Take out of the saucepan and leave to cool completely.
3 When the potatoes are cold, peel and cut into 1cm slices. In a large, heavy sauté pan, melt half the butter and fry the onions and garlic until soft and golden. Season and set aside.
4 Heat remaining butter and olive oil, add sliced potatoes and gently colour on both sides. Add the onion and garlic mix. Season to taste and serve
