Mackerel fillets with parsley breadcrumbs

Ingredients

75g/3oz breadcrumbs, lightly toasted
½ bunch flat-leaf parsley, finely chopped 4 mackerel fillets, rinsed and patted dry
1-2 oranges, cut into wedges
250g bag ready-washed spinach

Method

1 Preheat oven to gas mark 6/200ºC (190ºC in a fan oven). In a small bowl, add breadcrumbs and parsley, and season with a pinch of sea salt and freshly ground black pepper. Stir to combine.
2 Sit mackerel fillets in a roasting dish, sprinkle over breadcrumbs, then turn and coat other side. Throw
in a few orange wedges and put in oven to cook for 10-15 mins, till crumb topping is golden and fish is completely cooked through.  
3 While that's cooking, wash spinach and add to a large pan. Put lid on and cook till spinach has wilted completely. Drain well, add a squeeze of orange and serve with fish and orange wedges.
